It's just the total number of species you have ever caught (or possessed). The seventh-generation games unfortunately don't show this, although the Alola Pokédex caught number will be equivalent if you haven't traded for any Pokémon that don't exist in the Alola dex.

This is awesome! A dedicated Gen VI/VII catch rate calculator is exactly what I needed. I appreciate the links to the other generation calculators and the explanation of where to find more detailed information on the mechanics. Really helpful!

may i ask what the "caught" number in the national dex is referring to?

No in-game situation has been discovered that corresponds to the mystery terrain condition, so it can almost certainly be safely ignored. If you do bump into results that seem impossible (failing to catch a Pokémon that the calculator finds to be guaranteed), please do let me know and explain the circumstances of the capture attempt!

The way the formula works, there are absolutely no Pokémon that are impossible to catch with a Great Ball. I don't know what you're doing or why you're saying a level 12 Oricorio in particular can't, but have you tried just throwing more balls? Sometimes you simply get unlucky.

@Alex: The Let’s Go games have completely different capture mechanics, so none of this calculator would make sense for them, and none of the Let’s Go stuff would make sense for this one. If I were to add a Let’s Go capture calculator, it would be a completely separate calculator. I might do that eventually, but it’s not my highest priority.
